This is, I think, the best-liked kind of meat in most parts of Indonesia—certainly in my own part of West Sumatra, where any big family feast will have at its centre a lamb spitted and roasted whole. Indonesian cooks nevertheless regard lamb as an undisciplined, highly-flavoured meat, which needs plenty of garlic to keep it under control.
