All Indonesians love offal, with the result that pieces of the animal that you might expect to buy fairly cheaply in England turn out to be relatively expensive over there. The best saté of all is Saté Padang, in which different kinds of offal are skewered together. I have not included a recipe for it here, because the sauce is difficult to make and I cannot get all the ingredients for it in Europe. If, however, you are in Indonesia and have a chance to eat Saté Padang, take it.
