In the rice-growing areas, where the flooded fields abound in frogs and small fish, flocks of ducks are to be found in every village. They march out in the morning to the fields, usually in the care of a boy or an old man with a small flag on a pole. Towards dusk they reassemble around the flag for the journey home. They are, naturally, highly regarded as food, provided that the sauce is thick enough and the garlic sufficient to match the strong flavour of the meat.
Rich food of this kind needs plenty of rice to go with it—preferably plain boiled rice.
