Any Indonesian can live well as a vegetarian—when he has to. As well as the more elaborate dishes described here, I must also mention lalab: a plate of raw or lightly-cooked vegetables which are treated rather like an undressed salad, with each mouthful being dipped in sambal before it is eaten.
