Indonesian Food and Cookery is for the newcomer to Indonesian food as well as for the experienced cook. It will show you how to cook Indonesian food if, like me, you are far away from the islands; if, on the other hand, you are already there, or are planning to go there, either as a tourist or for a longer stay, or if you are planning to emigrate no further than the nearest Indonesian restaurant, then the book will I hope be a useful gastronomic guide.

The long Introduction is for the reader who wants to know something of the general background and something about Indonesian attitudes to food. The botanical notes that follow it should be of practical use to the visitor or resident in Indonesia, and of general interest so far as they deal with vegetables and fruits obtainable in other countries.
