When you are trying to introduce the cooking of one country to the kitchens of another, misunderstandings can all too easily arise. When these misunderstandings concern the quantities of highly flavoured ingredients, they can lead to unhappy results. I hope this short section may help to prevent confusion. We have three systems to cope with: the British (or ‘Imperial’), the American, and the metric.
