Flat Bean Salad

Recipes are often introduced by their season in Istanbul, so it’s common to hear the terms ‘winter’ or ‘summer dish: This is because the city’s winters can be harsh and its summers hot. And so it is that there are two versions of this flat bean dish: a cold salad with olive oil for a summer appetiser and a hot dish with meat for winter.
