Italy’s tiniest region, Aosta Valley, is tucked away into the highest corner of the Alps, north of Piedmont. It borders both France and Switzerland, neighbours who have always strongly influenced the cooking of the largely French-speaking population. It is now an autonomous region, meaning that it controls its own finances and planning. Farmers mainly concentrate on raising dairy cattle in the high Alpine pastures, producing milk for the various wonderful cheeses made here, as well as growing grapes to make some top-quality wines.
