Until quite recently sake and its variations had been the sole drinks in Japan. The first available record for a Japanese alcoholic drink was in a Chinese book written around ad 280, wherein the Japanese were said to “grow rice and hemp”, “drink sake, and dance with music and drink”. However, sake has long been superseded by beer, predominantly lager, as the drink of choice in Japan and may now have given way to whisky or even to wine in popularity. Despite this, sake is still the most respected drink of all. It is increasingly popular outside Japan along with Japanese food and cooking and is readily available.
