The most famous sushi, called nigiri, are hand-moulded fingers of vinegared rice with slices of raw fish on top. They are only one form of many types of sushi and are a relatively new invention from Tokyo. No one really knows when the word was first used; strictly, the word sushi means to vinegar (originally the rice was thrown away), but as the vinegared rice became the essential ingredient, sushi developed into a term signifying vinegared rice dishes.
