Well, of course, use salt and pepper “to taste.” Meaning season the food with the best-quality salt and freshly ground, toasted white or black pepper (or a pepper mix, such as the one on (page 39) so that it tastes good. I did not find it necessary to repeat the phrase every time salt and pepper are mentioned. If you are using an electric spice mill to grind the pepper, remember that you should sieve the ground pepper to separate the fine powder from the larger particles, but use them separately.
