This is much easier than you think. All you have to do is remember that the process is one of moving a small and very sharp knife between the flesh and the bone carcass, and that if you are unsure of how the carcass works or what the shape is, use your fingers to explore (while the knife is on the table). In fact, a lot of poultry boning can be done with your fingers.
