The fastest, most thorough, and easiest way to remove fat and scum from a sauce is to put the saucepan half on/half off the burner, at medium to low heat, and let the sauce simmer on one side of the pan only. This pushes all the fats to the edge that is off the heat, so that you can spoon them off as the sauce reduces.
