Flour in the recipes means all-purpose unless otherwise specified. When buying cornmeal, make sure not to get the self-rising kind (unless that is what you really want), which is what most of the packages contain these days. Buy polenta instead. And when buying grits, try to get real ones that are stone-ground and from a boutique mill or supplier.
