Provençal Pepper Mix

This is so delicious a way to use pepper at home that it hardly matters what kind of pepper you use. The secret ingredient is Jamaica pepper or allspice: the mix should be 6 tablespoons black peppercorns, 4 tablespoons white peppercorns, and 1½ tablespoons allspice berries. All of them dried, of course. Consider keeping this mix in your peppermill at all times.
