This means kosher salt, since I like the taste and feel of it. A pinch of fine salt is more than a pinch of kosher, so I have always insisted that my cooks use kosher to avoid the danger of oversalting. In some cases for very short cooking processes, fine sea salt will be called for. Adding expensive fleur de sel or sea salt to make salt water is a waste of money.
