New York deli culture, combined with the growing prosperity of American Jews who no longer needed to work on Sundays, gave way to the Sunday brunch. Each week, families throughout America buy bags of bagels from the bakery, schmears to spread on them and perhaps a few salads from the deli and gather together for brunch. Smoked salmon might be scrambled into eggs or piled on to bagels, matzos may be browned up with eggs into matzo brei, or smoked whitefish flaked into salad with mayonnaise and sour cream.
