Steamed pudding requires a special mold, which is easy to find at specialty kitchenware stores during the Christmas holiday season. Steamed pudding molds are made from metal, with tight-fitting lids (to keep out the steam) and central tubes (to encourage even baking of the thick, moist batter). They stand about 5 inches tall, and have a capacity of about 7 cups. You can use an 8-inch Gugelhupf pan (covered tightly with buttered aluminum foil) as a substitute, allowing about one quarter less steaming time.
