Dried fruit is usually prewashed and spin dried so there’s no need to clean. Dried fruit that needs washing should be well drained and spread on a cloth to dry for 2–3 hours in an oven turned to its lowest setting or another warm place. Remember wet fruit sinks to the bottom of a cake.

Sugared or Glacé fruits like Glacé cherries, pineapple or citron peel should be rinsed in warm water to remove sugary coating and dried before use. Otherwise sugary coating dissolves during baking and drags fruit down. Mix the fruit with 1 tablespoon of the recipe flour before folding it into the cake mixture.
