Wrapping sandwiches

  • Keep sandwiches with different fillings separate from each other so they don’t take on other flavours.
  • Set each sandwich (cut in halves or quarters) in centre of a square of waxed paper or kitchen foil (greaseproof paper is porous so must be over-wrapped with kitchen foil). To keep them moist top sandwich stack with a lettuce leaf, then bring opposite ends of wrapping together over centre and fold edges on top of sandwich stack, then tuck ends under. Wrapped like this the sandwiches can be refrigerated overnight.
  • Those arranged on plates should be covered with cling film – no damp cloth please!
