All my fish recipes are about experimenting with different flavours, textures and styles. If you see a recipe you really love, but you’re not keen on that fish, use another. What’s most important is not what it says in the recipe, but what catches your eye in the shop. The freshest produce will need the least help and that’s what leads to simpler cooking.
