Smell: Fresh fish has a salty, seaweed aroma. A strong smell of fish spells stale. Don’t touch it.

Eyes: Should be clear, bright and full.

Skin: Glistening with clear, not cloudy, slime.

Gills: Bright red or deep pink gills show that oxygen is still present and the fish fresh.

Touch: Firm fish is fresh fish. If you press on the skin, it shouldn’t leave a finger mark.
