Mussels: 500g (1lb 2oz) mussels per person generally allows around 15-20 mussels each.

Scallops: Buy 4-5 large scallops per person for a main course.

Oysters: 5-6 oysters each makes for a generous starter.

Crab: A 1kg (2¼lb) whole crab will provide roughly 350g (12oz) crabmeat.

Lobster: For a whole lobster, you need roughly 450g (1lb) per person for a main course.

Prawns: The amount required really depends on size and what you need them for. The recipes will give you a good idea on quantities.

Langoustines: About 5-6 per person for a main course, depending on size.
