Pan-fried scallops with oniony mash. Quickly sear scallops and serve with mashed potatoes and a little sauce of onions very slowly cooked in butter and caramelized with some sugar.

Colcannon crab cakes. Mix cooked crab with Colcannon potato made from mash, cooked cabbage and cream, pat into little cakes and lightly pan-fry.

Squid with a walnut and orange salad. Make a salad from cracked walnuts, lettuce leaves, walnut oil and wedges of orange to serve with quickly pan-fried squid.

Prawns, tomato and fresh herb pasta. Make a quick after-work supper by cooking together some chopped onion, cooked prawns, passata and torn basil.
