Melting tomatoes with chicken. Cook ripe deseeded tomatoes in a trickle of olive oil with a hint of garlic and onion. Spoon over a cooked chicken breast, top with a slice of Emmental or Gruyère and grill.

After-work chicken pasta. Take any one of the vegetarian pasta dishes and stir in roast chicken leftovers.

Roast chicken with sweetcorn fritters. Make the fritters from tinned sweetcorn mixed with potato mash and spring onion. Lightly flour, pan-fry in a little butter and serve with a piece of hot or cold roast chicken.
