When you’re buying pork, make sure the meat is moist but never over oily.

A high fat content is essential to the most beautiful cuts of pork. Don’t be afraid of it because it helps tenderize the meat.

If you can get hold of a specially reared breed, like Gloucester Old Spot, it will be fabulous to eat because its free lifestyle produces a richer flavour.

British pork in general is very good, but you will get better quality if you pick outdoor-reared pork.
