New potato and egg salad. Add boiled or sautéed new potatoes to a salad with chopped egg, spring onion and a mayonnaise or vinaigrette dressing.

Fresh peas with bacon and onions. I adore fresh peas with fish and seafood. Add butter, crispy bacon and cooked baby onions to them with some fresh mint or give them a nutty bite with chopped chestnut.

Buttery leeks with pan-fried fish. Fry shredded leeks in butter until tender and serve with pan-fried fish.

Green beans with bacon and sour cream. Make a little dressing for hot sliced runner beans or French beans from sautéed bacon, onion, sour cream and lots of seasoning.
