Lettuce. I love a real English summer salad, especially one made from soft lettuce leaves. Mizuna, the Japanese leaf, is worth adding, but don’t fall into the trap of overmixing your lettuces because each one does have its own flavour. Those mixed salad bags can be good though if you like a powerful salad with a sharp flavour. The lettuces chosen tend to be crisp and hold together well. My best combination is watercress and rocket with its zesty, pepper bite.

Avocados. A wonderful fruit, but they often seem to need a helping hand because it can be difficult to buy them ripe and at their best.
