I’m particularly fond of green vegetables in summer, but I also just can’t miss out on all the summer flavours of Provence. Courgettes, peppers and aubergines are delicious with lamb, poultry, pasta or made into a salad. Don’t bother to pre-salt your aubergines because these days they are rarely bitter.
