Spices. Add spices to the butter at the start of cooking. A couple of cardamom pods, a cinnamon stick or some dry-roasted cumin or coriander seeds turn the braised rice into an aromatic spicy pilau rice.

Tomatoes. Stir in chopped ripe tomatoes at the end of the cooking.

Prawn skewers. Put 3-4 prawns on skewers, brush with butter, salt and pepper and heat under the grill for a few minutes on each side until cooked through. Serve with herby braised rice.

Nuts. Add cashew nuts, shelled pistachios or toasted pine nuts at the beginning of cooking, perhaps with some spices, for Eastern-flavoured rice.
