The only basics you need if you’re making a risotto are butter, onion, rice and stock. If you have got these four ingredients, you have made yourself a risotto. After that, it’s purely additions. I am, however, a big Parmesan fan and I adore that flavour, so for me that’s a pretty essential addition.
