Some Simple Cheese Suppers

Potato, pepper and cheese bake. If you’ve got leftover new potatoes, half an onion and a red pepper sitting in your fridge, fry together until golden. Crack in 6 eggs for a supper for 2-3, stir, then pop under the grill with any cheese you have scattered over the top. Supper is done when the cheese melts.

Cheese and herb dip. Mix crème fraîche with fresh herbs and a soft cheese and serve with spring onions or flavoured breads for dipping.

Tomato soup with Gruyère croutons. Cut slices of French bread and pop under the grill with a topping of grated Gruyère and Cheddar. Scatter Parmesan on at the end to make croutons to top a bought fresh tomato soup.
