Autumn

Autumn, a transitional time when the country yields wild mushrooms and a profusion of game in the rich months that precede the austerity of winter. Partridge is paired with braised cabbage and pancetta, an eclectic mix of French method, Italian flavouring and British bird - the best of all possible worlds.
