Boning Small Oily Fish

Small oily fish such as sardines or sprats are so soft they can be boned with your fingers. Here, sardine is shown.
  1. Pinch off the head of the fish between your finger and thumb and discard it, together with the gills.

  2. Press open the belly with your finger and scoop out the intestines.

  3. Open the fish flat along the belly and pull out the backbone, starting at the head end and loosening it with your fingers. Snap the backbone at the tail, then rinse the fish fillets and leave them to dry before baking or frying.
