Testing when a Cake is Done

All cakes shrink slightly from the sides of the pan when done. For whisked cakes, test by pressing the center of the cake with your fingertip. The cake should spring back if it is done. For creamed and melted cakes, insert a wooden toothpick or skewer into the center of the cake; if it comes out clean, the cake is ready.
