Storing Cakes

Once cooled, cakes should be stored, lightly covered in plastic wrap, in an airtight container. Cakes with icing, filling, or fancy decoration keep better in the refrigerator without a wrapping. The fat content of a cake helps moisten it, and extends its keeping time. Cakes that contain fresh or dried fruits, nuts, chocolate, spice mixtures or honey mellow on standing, as do those with fillings such as butter cream. Elaborate decorations are best added shortly before serving as they crush easily. Cakes and butter cream freeze well, but sugar fillings and icings will crystallize.
