For me, a onetime overly ambitious hostess who is now wedded to the joys of make-ahead, brunch offers the possibility of a convivial meal that’s light on preparation once the guests have arrived. When creating a menu, I am always careful to include only one dish that requires my last-minute attention, which allows me to join, and enjoy, the brunch. I plan dishes that match the season and the occasion, as well. Plus, brunch doesn’t need to be a multicourse affair. Hosting can mean setting up a granola or bagel bar, where guests can choose their own toppings; passing platters of scrambled eggs and bacon at the table family-style; or composing a perfect plate of sweet and savory treats. Fresh fruit juices, coffee and tea, and a signature drink round out every menu. Here are a few of my general guidelines for brunch entertaining.
