I fondly remember a type of candy called Sugar Daddys that I often devoured as a child. It was soft caramel on a stick, a clear winner. Could anything be better? The Sugar Daddy candy was my inspiration for this Last Bite. I adjusted an old-fashioned caramel recipe by replacing half of the cream with passion fruit puree, and the result was a sweet, acidic confection that melts slowly in your mouth. I’ve made this same recipe with many other purees, and let me tell you: besides passion fruit, guava was also incredible. Always be careful when cooking caramel! It’s a lava-like substance that can seriously burn you if any of it gets on you. Don’t dip a finger for a quick taste, don’t lick the spatula right away, and don’t steal caramel before it’s good and ready. It’s caramel. Be respectful.
