As the season moves on, so does the climate, with the arrival of the dark, dank days of autumn, and the sounds of running becks and bubbling brooks. The scent of snow is in the air, as skeins of Canadian geese take up their yearly ice-skating antics on Castle Howard lake, after the flying formations announce their arrival with a rousing, endless chorus of rhythmic honking.

Michaelmas and Christmas are the most popular times of the year for goose consumption. Farm-reared geese are best, with greater consistency of flavour and taste. They should be hung for a few days to allow the meat to relax, and for the flavour to improve.
