I’m particularly passionate about eating British seafood because in my opinion, it’s some of the best in the world. There’s sometimes a kind of mystique about fish; people think it’s difficult to cook but it’s really not. Even kids can get involved, making it an accessible and family-friendly ingredient. I wish more people would cook with fresh fish, and if that means stretchy cheese occasionally for those who would not usually eat fish, like in the recipe I’ve shared for this book, then so be it!
