These menus consist of suggestions for recipes using not only foods in their relevant seasons, but also the type of dish I feel inclined towards in the varying seasons. Cheese Beignets with Tomato Sauce make an ideal first course in cold winter months, for instance, whereas a cool Watercress and Lime Mousse with a Roast Red Pepper Sauce is perfect for a warm summer’s day. And Cinnamon Crêpes with Apple and Calvados Brandy Butter are delicious and autumnal, whereas walnut and brown sugar meringues with Rhubarb and Ginger Sauce are a perfect pudding for springtime.
