This chapter has a great variety of meat dishes in it, from those that you may wish to cook for your family, such as Minced meat with peas (Qeema matar) and Pork chops with chickpeas, to Raan masaledar – a whole leg of lamb garnished with almonds and raisins – which would impress the most blasé of guests.

There are a lot of lamb recipes, as we do eat a fair amount of lamb in India. We also eat a lot of goat and I have given you a recipe for kid goat. As goat can be hard to find in Britain, I have usually substituted lamb. I love English lamb. I realise that it is a bit expensive, but it does have excellent flavour.
