There are several foods we have strong opinions about, and rice is definitely one of them. We love rice. We find it infinitely satisfying, day after day, year after year. And we also find it infinitely interesting, The Subcontinent is a rice-eater’s paradise, with countless varieties and styles of rice, depending on where you are or what style of food you’re eating, from the mountain rices in Nepal to tiny kalijira rice in Bengal and Bangladesh to large fat red rices in southern India and parboiled rices in Sri Lanka and elsewhere.
