Where do you start when you want to thank and acknowledge the people who have helped bring your dream to life? My lifelong dream has always been to create a beautiful, contemporary Japanese restaurant and bar. This cookbook now showcases and illustrates that dream.

First of all, thanks to those closest to me – my beautiful family Kelly, Kiana and Lucas, who have travelled, eaten, listened and shared with me my passion for flavour.

We have travelled the globe in search of great, unique food – fine dining and street food – in a quest to better understand our palates. Kelly is the most informed on these journeys, and is my greatest sounding-board for all things, both in restaurants and in life. Kiana, my nine-year-old, is my kitchen helper – she has been with me in the kitchen since she was four and continues to be to this day – it’s awesome. Lucas is my best mate at six years old, and he is constantly testing my commitment to pure, unprocessed foods – my little legend. Without my family’s passion for flavour and dedication to detail, this cookbook could not have happened.
