A wine should be on a list only if it is ready to drink.
In the same way, it should only be served at the right temperature. This can be a problem, particularly when drinking abroad, where tastes may be different. If a fine red wine is served at cellar temperature, the sommelier should have warned you that it will be colder than commonly accepted. If he or she can’t warm it, then the sommelier should tell you what is available to drink at an appropriate temperature.
If a wine is too warm, ask for an ice bucket - this includes red wine as well as white. Give it a few minutes in the bucket to cool down before you pour. If your wine is in an ice bucket, help yourself, although a good sommelier should also anticipate when your glass needs refilling.
