Getting the Temperature Right

Serving wines at the correct temperature allows them to show off their charms. Without being too dogmatic, white wine needs to be cool enough to be refreshing, while red wine should be slightly warmer. On a hot summer’s day you may well prefer all wines to be slightly cooler than you would on a cold winter’s evening.
