It is much easier to serve white wine at the right temperature than it is red - in some cases a wine straight from the cellar will be cool enough. Bear in mind that the higher the quality of a white wine, the less cold it should be served, so that you can properly appreciate its flavour. To get white wine to the right temperature, choose one of the following options:
  • Store the bottle in the refrigerator for an hour before serving. Don’t keep in the refrigerator for too long, however, as over-chilling could impair the flavour of the wine.
  • Immerse the entire bottle in ice-cold water for 10 minutes. This is a more efficient method than the refrigerator, as water is a better cooling medium than air.
  • In an emergency, you can place the bottle in the freezer for up to 15 minutes, although this is not recommended for fine wines. Keep checking on the wine so that it doesn’t freeze.
  • Many wine shops now have cooling machines that can chill a bottle in a few minutes, which is ideal for taking wine to a party.
