The sooner you think about preserving wine you have just opened, the better. The less time oxygen has to get to work on the wine, the longer the wine will retain its flavour and aroma. Even using the best wine preserving gadgets on the market, wine may not last for more than a week. A fine old wine may not last more than a few hours in any circumstance, and is best drunk as soon as possible.

If you leave the bottle open overnight, most wines will lose their aroma, and many will be spoiled. If you re-cork a bottle and leave it at room temperature, it should last 24 hours or more.
