One in five bottles of Champagne consumed in France is used for cocktails. Although it is rarely worth using a super-premium bottle of Champagne, using a good-quality Champagne that you would buy for drinking on its own will ensure that you enjoy your cocktail. In the earliest days of Champagne production it was often flavoured with sugar and bitters. This flavouring is still popular today in the form of the classic Champagne Cocktail.

Sparkling wine and champagne cocktails are rarely shaken or stirred, as the movement of the bubbles will mix the ingredients. Additional agitation will cause the wine to lose its sparkle (mousse).
