If you’ve bought beef, but only plan to eat it in a few days (even a week), don’t keep it in the bag in your fridge. Remove it from the bag, wipe it down with olive oil and cover it with a muslin cloth for a little extended dry aging. Turn it every now and then, but resist putting it in plastic; it needs exposure to the flow of air. Don’t keep it longer than a week, however, as extended dry aging needs monitored humidity.
